  • 1 pound unsalted butter melted and cooled (2 cups)
  • 1 egg yolk
  • ¾ cup powdered sugar plus about 2 additional cups for dusting
  • ½ teaspoon fine sea salt
  • 56 cups all-purpose flour
  • ¾ cup almond flour or almond meal
  • 1 teaspoon almond extract

  1. Warm the oven up to 325°F. Paper or silicone bread mats should be used to line baking sheets. Put away.
  2. Melt the butter and add the egg yolk, ¾ cup of powdered sugar, and salt to the bowl of a stand mixer with the paddle attachment.
  3. Slowly add 5 cups of all-purpose flour while the machine is on low speed. For 15 minutes, keep mixing on low speed and scrape the sides of the bowl as needed.
  4. Put the almond meal and almond flavor in the bowl. Set the speed back to low and mix for another 15 minutes.
  5. There are a few minutes left to mix the dough. If it is too soft to shape into a ball, add the last cup of flour ½ cup at a time until it can be shaped.
  6. Use 1.5-tablespoon pieces of the dough to make crescents, which you will then place on the baking sheets that have been lined.
  7. The cookies should be baked for 13 to 14 minutes, or until they are pale, dry on the outside, and set on the bottom.
  8. For five minutes, leave it on the baking sheet to cool. Carefully take each cookie off the baking sheet and cover it with the rest of the powdered sugar. Be very careful with cookies because they are very fragile.
  9. The cookies should cool all the way down on a wire rack. Cover the cookies in powdered sugar one more time after they are nice and cool.
