  1. Warm the oven up to 350°F.
  2. In a small bowl, mix together the Dijon, butter, and honey. Melt the butter in the microwave for about 20 seconds, then mix the ingredients together.
  3. When cutting the croissants in half across the middle, use a knife with sharpened edges. Spread the Dijon butter on the bread that has been cut.
  4. Put a slice of cheese, ham, bacon, and another slice of cheese on the bottom of each croissant. Put the biscuit tops on top. Put them on a baking sheet.
  5. Place the croissants in an oven that has already been heated up. Bake for 10 to 15 minutes, or until the cheese melts and the tops are crispy.
  6. Mix the eggs, milk, and a pinch of salt and pepper in a bowl while the croissants are baking.
  7. Fry one spoonful of butter in a nonstick pan over medium-low heat. For two to three minutes, until the eggs are soft, add them to the pan. Put it in a bowl.
  8. When you take the croissants out of the oven, put an egg on top of each one. If you want, you can add fresh onions as a garnish.
