For the cake:

  • 2 cups sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 tablespoons Dutch process cocoa optional
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup strong black coffee
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract

For assembling:

  • 1 batch strawberry frosting
  • 810 fresh strawberries sliced
  • 1 batch chocolate ganache

  1. Preheat the oven to 350 degrees Fahrenheit. Both of the round baking pans should be greased and floured. Put aside for later.
  2. Mix the sugar, flour, cocoa(s), baking soda, baking powder, and salt together in a large bowl using an electric mixer or in the bowl of a stand mixer that is equipped with the whisk attachment. These ingredients should be combined. On low speed, mix until all of the dry ingredients are completely incorporated.
  3. Whisk in the buttermilk, eggs, coffee, oil, and vanilla extract. The batter will be very thin after being beaten for approximately two minutes at a medium speed.
  4. Place the batter in the prepared pans in an equal layer.
    Bake for thirty to thirty-five minutes in an oven that has been preheated, or until a wooden toothpick inserted in the center comes out clean.
  5. After ten minutes, remove from pans and place on wire racks to cool. Completely cool down.

Putting together:

  1. Using a cake plate or a cardboard circular, position one of the cake layers on the surface. Arrange approximately half of the strawberry icing on top. Add the cut strawberries on top of the dish.
  2. To the cake, add the second layer. The remaining strawberry frosting should be used to decorate. Serve with the ganache on top. For an extra-special decoration, try dipping whole strawberries into some of the ganache. You can decorate the cake however you like with additional strawberries (you can try this).
  3. Refrigerate until ready to serve, and store in the refrigerator. Before beginning to cut, let the temperature to normalize.
