Instructions

  1. I melted chocolate in a double boiler. I melt in a heat-proof bowl or double boiler (or small sauce pan) over simmering water over medium heat. Stir melting chocolate. Allow to cool.

  6. Soft, sticky dough needs chilling. Refrigerate the mixing bowl covered in plastic wrap for 30 minutes to 2 hours. More chilling makes it easier to work with. If the dough is sticky after 30 minutes, chill longer.
  7. Divide dough and chill: Divide and chill in dough logs. Roll each portion of dough into a 16-inch-long, 1-inch-diameter log on a clean countertop with confectioners’ sugar to prevent sticking. Wrap logs in plastic and place on a fridge shelf.
  8. Preheat oven: While preheating the oven to 350 degrees F, line your baking sheets with parchment paper. Baking spray.
  9. Roll cookie balls: Cut each log into 1-inch pieces. Use your clean hands or a medium-sized ice-cream scooper (or spoon) to portion the dough if you didn’t roll it. Use your hands (spray with baking spray to make it easier) to roll the pieces into balls and toss them in a small bowl of confectioners’ sugar. If any cocoa-colored dough remains, roll it in confectioners’ sugar again to coat. Keep the other dough logs chilled while you work with the first.
