  1. Pulse the oats in a food processor until they are broken up into small pieces. Add the buttermilk and mix it in with a whisk in a big bowl. Take a 10-minute break.

When you add the flours, baking powder, baking soda, cinnamon, and salt, whisk them together until they are just mixed. It’s okay if there are still some lumps. While you heat up the pan or grill, let the batter rest for 5 to 10 minutes.
  3. Set a big pan or grill over medium heat. When the pan is hot and the pancake batter has had a chance to rest, add the melted butter and mix it in with a whisk until it’s just mixed.
  4. Spread some butter on the hot cooking surface. Use a paper towel to spread the butter out evenly and wipe off any extra. A ¼-cup measure is used to add batter to the pan or griddle. Be careful not to fill the pan too much.
