Ingredients

  • 6 tablespoon butter well softened
  • ¼ cup Swerve Brown
  • 2 tablespoon powdered Swerve Sweetener
  • 1 ½ tsp ground cinnamon

Pancakes

  • 1 recipe keto pancakes
  • ¾ teaspoon ground cinnamon
  • Cream Cheese Drizzle
  • 2 ounces cream cheese well softened
  • ¼ cup powdered Swerve Sweetener
  • 2 tablespoon heavy cream
  • 2 tablespoon water
  • ½ teaspoon vanilla extract

Instructions

Cinnamon Swirl

  1. Get the butter very soft, but don’t melt it. Using a rubber spatula, mix in the sweeteners and cinnamon until everything is well mixed. It needs to be sticky like soft frosting.
  2. Put the mix in a piping bag or a plastic bag with a small cut off corner or tip.

Pancakes

  1. Follow the recipe for the pancake batter, but add the cinnamon along with the dry ingredients.
  2. Take a 10-minute break to let the batter thicken. Then, heat a large skillet over medium-low heat. Use a little oil or butter to grease.
  3. For each pancake, spread out about 3 tablespoons of batter into a circle that is 3 to 4 inches across. On top of each pancake, pipe the cinnamon mixture in the shape of a swirl. Three to four minutes, or until bubbles form on top and the edges are set and dry.
  4. To loosen the pancakes, carefully move a spatula with a thin blade under the edges. They should be cooked for another 2 to 4 minutes, or until the second side is golden brown. Move to a platter or a rack for warming up.
  5. Between pancake batches, wipe the pan clean with a paper towel. If you don’t, the cinnamon mixture will burn. Do it again with the rest of the batter, and if necessary, add more butter or oil to the pan.
