  • 1 tablespoon cocoa powder
  • 2 teaspoon baking powder
  • 2 teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt

Vanilla Drizzle

  • ⅓ cup powdered Swerve Sweetener
  • 1 to 2 tablespoon water
  • ½ teaspoon vanilla extract

Instructions

Muffins
  1. Prepare a standard metal muffin pan by lining it with twelve silicone or parchment liners and preheating the oven to 350 degrees Fahrenheit.
  2. To make the sour cream, eggs, and vanilla extract, combine them in a large bowl and whisk them together.
  3. Add the sweetener and whisk until it is completely incorporated, using the back of a fork to break up any clumps that may have formed.
  4. Stir the almond flour, protein powder, cocoa powder, baking powder, ginger, cinnamon, cloves, and salt together until they are thoroughly combined.
  5. Add the almond flour.
  6. Fill each muffin cup about ¾ of the way to the top with batter.
  7. When it’s done, it should be golden brown and firm to the touch.
  8. Take it out of the pan and let it cool down there.
Vanilla Drizzle
  1. Add the sweetener and just enough water to a medium-sized bowl and mix them together using a whisk.
  2. Add the vanilla extract and mix well. Pour over the muffins that have cooled.
