INGREDIENTS

Sambal Paste

  • 1/4 cup Onion Shallot or red onion
  • 1 Red Chili Bird’s Eye / Thai Chili
  • 1 tsp Garlic Minced
  • 1 tsp Shrimp Paste Optional

Order of Ingredients For Wok Frying

  • 1 tbsp Oil
  • 1 Egg
  • 1 tbsp Sambal Paste
  • 1/4 cup Frozen peas
  • 1 cup Cooked Rice
  • 1 tbsp Kecap Manis
  • 1 tsp Soy Sauce
  • 1/2 tsp Salt
  • 1/2 tsp Pepper Ground

For Garnish

  • 1 tbsp Coriander
  • 1 tbsp Green Onion Sliced
  • 1 tbsp Fried Onions optional
  • 1 Egg Fried
  • 1/4 cup Cucumbers Sliced
  • 1/4 cup Tomato Sliced Instructions

Instructions

Make Sambal Paste
  1. Put the garlic, chili, and shallots in a food processor or mortar and grind them together to make a paste.
Scramble Egg
  1. Put oil in a hot wok. Wait until the oil starts to smoke.
  2. Add one egg to the hot wok after beating it.
  3. Swirl the egg around and use a spatula to break it up. Take it out of the wok and set it aside.
Stir Fry
  1. Heat the wok with oil until it smokes.
  2. When the oil is hot, add the sambal paste and fry for two minutes, or until the food is fully cooked and no longer looks raw. The paste and oil should separate.
  3. It will take about two minutes of cooking after you add the peas.
  4. After that, add the rice and stir-fry it until the sambal paste covers it all. This tool will help you break up any lumps.
  5. Put in the soy sauce, salt, and pepper.
  6. Fry until everything is well mixed. Put it on a plate to serve.
Garnish
  1. Put some oil in the wok and then add the second egg.
  2. While the white is cooking, keep the heat on low and let the yolk run free.
  3. Place this egg on top of the rice.
  4. Put on top of the dish fried onions, tomato slices, cucumber slices, coriander, and spring onions. Warm up and serve.
